- 1 lb extra-lean ground turkey
- 1 yellow onion, chopped
- 3 garlic cloves, minced
- 1 medium red bell pepper, chopped
- 2 (15 oz) cans dark red kidney beans
- 1 (15 oz) can sweet corn
- 1 (28 oz) can diced tomatoes
- 2 teaspoons olive oil
- 4 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- ¼ teaspoon cayenne pepper
- ½ teaspoon salt, plus more to taste
- 1 ¼ cups chicken broth
Instructions
- Heat olive oil in a large pot over medium-high heat. Add onion, garlic, and red bell pepper; sauté for 5–7 minutes until softened.
- Stir in the ground turkey and cook until browned.
- Add spices (chili powder, cumin, oregano, cayenne pepper) and toast for about 20 seconds.
- Mix in diced tomatoes, chicken broth, kidney beans, and corn; bring to a boil.
- Reduce heat and simmer for 30–45 minutes until thickened. Adjust seasoning as needed before serving.
