Instructions
- In a bowl, mix dairy-free milk, 1/4 cup sugar, and activated yeast; let it foam for 10 minutes.
- Combine bread flour and remaining sugar in a large bowl. Add yogurt, vanilla, and foamed yeast mixture. Mix until a shaggy dough forms.
- Gradually mix in vegan butter until incorporated.
- Knead the dough on high speed for 10-15 minutes until soft. Let rise in a greased bowl until doubled (60–120 minutes).
- Prepare the cheesecake filling by mixing vegan cream cheese with remaining ingredients.
- Shape risen dough into buns and create space for fillings. Fill with cheesecake and apple mixture.
- Bake at 375°F for about 20 minutes until golden.
