Instructions
- Prepare the filling by combining diced apples, brown sugar, cinnamon, lemon juice, and cornstarch in a bowl. Let it sit for 10 minutes.
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a floured surface and cut it into squares.
- Place a spoonful of apple filling in the center of each square. Fold over to seal edges securely using a fork.
- Brush doughnuts with plant-based milk for a golden finish.
- Bake for 20-25 minutes until golden brown and puffed.
- For icing, whisk together powdered sugar, plant-based milk, and vanilla extract until smooth; drizzle over cooled doughnuts.
