  • 1 1/2 pounds potatoes (cubed)
  • 4 slices bacon (cooked and crumbled)
  • 1 small onion (diced)
  • 2 cloves garlic (chopped)
  • 1/4 cup apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon grainy mustard
  • Salt and pepper to taste
  • Optional: 1 tablespoon sugar, fresh parsley for garnish

Instructions

  1. Boil the cubed potatoes in salted water for about 10 minutes, until tender but not mushy. Drain and set aside.
  2. In a large pan, cook the bacon until crispy. Remove and reserve 2 tablespoons of bacon grease.
  3. Sauté the diced onion in the reserved grease until tender (about 5 minutes), then add chopped garlic and cook for an additional minute.
  4. Stir in apple cider vinegar, Dijon mustard, grainy mustard, optional sugar, salt, and pepper. Mix well.
  5. Toss the boiled potatoes with crumbled bacon and dressing mixture until everything is well-coated. Serve warm.
