Ingredients
- 1 1/2 pounds potatoes (cubed)
- 4 slices bacon (cooked and crumbled)
- 1 small onion (diced)
- 2 cloves garlic (chopped)
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon grainy mustard
- Salt and pepper to taste
- Optional: 1 tablespoon sugar, fresh parsley for garnish
Instructions
- Boil the cubed potatoes in salted water for about 10 minutes, until tender but not mushy. Drain and set aside.
- In a large pan, cook the bacon until crispy. Remove and reserve 2 tablespoons of bacon grease.
- Sauté the diced onion in the reserved grease until tender (about 5 minutes), then add chopped garlic and cook for an additional minute.
- Stir in apple cider vinegar, Dijon mustard, grainy mustard, optional sugar, salt, and pepper. Mix well.
- Toss the boiled potatoes with crumbled bacon and dressing mixture until everything is well-coated. Serve warm.
