  • 3 Tbsp sherry vinegar
  • 3 Tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 watermelon (approx. 9 cups)
  • 1 cucumber, seeded and diced
  • 1 red bell pepper, seeded and chopped
  • 3 roma tomatoes, seeded and diced
  • 1/4 red onion, diced
  • 1 jalapeño, seeded and diced small
  • Fresh herbs (basil and parsley) for garnish

Instructions

  1. In a small bowl, whisk together sherry vinegar, olive oil, salt, and pepper.
  2. In a blender, combine half the watermelon with half the cucumber, half the bell pepper, two roma tomatoes, and red onion. Blend until smooth while gradually adding the vinegar mixture.
  3. Transfer the blended soup to a large bowl and stir in the remaining diced watermelon, cucumber, bell pepper, one roma tomato, jalapeño, and fresh herbs.
  4. Chill thoroughly before serving for maximum refreshment.
