  • 1 medium onion

  • 4 cups chicken broth

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese

Instructions

  1. Cook lasagna noodles in salted boiling water until al dente; drain and set aside.
  2. In a skillet, heat olive oil and brown the Italian sausage; remove excess fat.
  3. Sauté chopped onion in the same skillet until softened, then add minced garlic.
  4. In a large pot, combine sausage, onion, garlic, chicken broth, Italian seasoning, salt, and pepper; bring to a simmer.
  5. Stir in cooked noodles and ricotta cheese; mix well before adding half of mozzarella and parmesan. Simmer until heated through.
