- 4 medium-sized beets

Instructions
- Preheat oven to 400°F (200°C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender. Let cool, peel, and slice.
- In a large bowl, combine mixed greens.
- Whisk together dressing ingredients: olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.
- Add sliced beets to greens along with goat cheese, walnuts, and cranberries if using. Drizzle with dressing and toss gently.
