Ingredients
- 1 lb beef stew meat
- 2 cups beef broth
- 1 cup red wine
- 3 carrots, sliced
- 2 potatoes, cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, brown the beef on all sides (5-7 minutes).
- Add onion and garlic; sauté until softened (3-4 minutes).
- Stir in tomato paste, thyme, and bay leaf until well combined.
- Pour in red wine; scrape up any browned bits from the bottom.
- Add beef broth, carrots, and potatoes; bring to a boil then reduce heat.
- Cover and simmer for 1.5 to 2 hours until beef is tender.
- Season with salt and pepper before serving.
