- 4 cups all-purpose flour
- 1 ½ cups unsalted butter, cold and cubed
- 10 cups Granny Smith apples, peeled and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 2 tablespoons all-purpose flour
- 2 tablespoons unsalted butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- 1 tablespoon coarse sugar
- Salt
- 1 tablespoon granulated sugar
- 6 to 8 tablespoons ice water
Instructions
- Prepare the crust by mixing flour, salt, and sugar; cut in cold butter until crumbly. Add ice water until dough forms. Chill for at least an hour.
- For the filling, toss sliced apples with lemon juice and spices.
- Preheat oven to 425°F (220°C). Roll out one dough disc for the base and fill with apple mixture.
- Cover with a second rolled disc, seal edges, cut slits on top, brush with egg wash, and sprinkle sugar.
- Bake for 15 minutes at high heat; reduce to 350°F (175°C) and bake an additional 30-40 minutes until golden.
