- 1 pound ground beef
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 teaspoons minced garlic
- 1 teaspoon Worcestershire sauce
- 1 teaspoon tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 cup beef broth
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1 cup all-purpose flour
- 1 cup whole milk
- 3 large eggs
- ½ teaspoon salt
- 3 tablespoons unsalted butter
Instructions
- Preheat your oven to 425°F (220°C).
- In a skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion, carrots, and celery; sauté until tender.
- Mix in garlic, Worcestershire sauce, tomato paste, thyme, salt, pepper, and beef broth. Simmer for about 10 minutes.
- In a mixing bowl, whisk together flour, milk, eggs, and salt until smooth; let rest for 30 minutes.
- Melt butter in a muffin tin in the oven.
- Pour batter into muffin cups halfway full and spoon meat mixture on top.
- Bake for 20-25 minutes until golden brown.
