  • 4 medium zucchinis
  • 2 cups marinara sauce
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice zucchinis lengthwise into thin strips using a mandoline or sharp knife. Lay them on paper towels, sprinkle with salt, and let sit for 10-15 minutes to remove excess moisture.
  3. In a medium bowl, combine ricotta cheese, egg, oregano, basil, salt, and pepper; mix until smooth.
  4. In a 9×13 inch baking dish, spread a thin layer of marinara sauce at the bottom. Layer half of the zucchini slices over the sauce followed by half of the ricotta mixture. Add another layer of marinara and sprinkle with mozzarella cheese. Repeat layering with the remaining ingredients and finish with Parmesan cheese on top.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
  6. Allow cooling for about 10 minutes before slicing and garnish with fresh basil.
