- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter (very cold)
- 6 medium baking apples (Granny Smith, Honeycrisp, or Fuji)
- Granulated sugar
- Light brown sugar
- Ground cinnamon
- Ground nutmeg
- Lemon juice
- 1 large egg (for egg wash)
Instructions
- Prepare the pie crust by mixing flour and salt. Cut in cold butter until crumbly. Add ice water gradually until dough forms. Divide and chill for 30 minutes.
- Make the apple filling by tossing sliced apples with sugars, flour, spices, and lemon juice until coated.
- Roll out one dough disk into a circle and fit it into a pie dish. Fill with apple mixture.
- Roll out second dough disk, cut into strips, and weave over filling to create a lattice top. Trim and crimp edges.
- Brush lattice with egg wash and sprinkle with sugar. Bake at 400°F for 15 minutes; lower to 375°F for 35-45 minutes until golden.
- Cool for at least 2–3 hours before serving.
