Ingredients
- 1 cup brewed coffee, cooled
- 2 tablespoons coffee liqueur (optional)
- 2 cups mascarpone cheese
- 1 cup heavy whipping cream
- ½ cup powdered sugar
- 24–30 ladyfingers (savoiardi)
- 1 cup cherry pie filling (or fresh cherries)
- Cocoa powder for dusting
Instructions
- In a shallow dish, mix the cooled brewed coffee and coffee liqueur (if using). Set aside.
- In a large bowl, beat mascarpone cheese, heavy whipping cream, powdered sugar, and vanilla extract until smooth and fluffy.
- Quickly dip each ladyfinger into the coffee mixture and layer half in a 9×9-inch dish.
- Spread half of the mascarpone mixture over the ladyfingers and top with half of the cherries. Repeat layers with remaining ingredients.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight before serving.
- Dust with cocoa powder before cutting into squares to serve.
