- 4 large egg whites
- 1 cup granulated sugar
- 1 teaspoon white vinegar
- 1 teaspoon cornstarch
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa powder
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon peppermint extract
- 2 ounces dark chocolate, finely chopped
- Fresh mint leaves for garnish
Instructions
- Preheat the oven to 250°F (120°C) and line baking sheets with parchment paper. Whip egg whites until soft peaks form, then gradually add sugar until stiff peaks are achieved. Fold in vinegar, cornstarch, vanilla extract, and cocoa powder.
- Spoon meringue onto baking sheets in round layers (8 inches each) and bake for 1 hour. Leave to cool in the oven.
- In another bowl, whip cream with powdered sugar until soft peaks form; stir in peppermint extract and chopped chocolate.
- Assemble by layering meringue with filling on a serving plate; dust with cocoa powder and garnish with mint leaves.
