  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 cup buttermilk
  • 1/4 cup unsalted butter, melted
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 cup fresh cranberries

Instructions

  1. Preheat oven to 375°F and line a 12-cup muffin pan with paper liners.
  2. For the streusel topping, mix flour, sugar, cinnamon, and cold butter in a bowl until coarse crumbs form. Set aside.
  3. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, combine egg, buttermilk, melted butter, orange zest, and vanilla extract.
  5. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
  6. Fold in fresh cranberries carefully.
  7. Divide batter among muffin cups filling each two-thirds full.
  8. Sprinkle streusel topping on each muffin.
  9. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  10. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
