Ingredients
- 1 tablespoon olive oil
- 4 boneless, skinless chicken breasts (about 1.5 pounds total)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup fresh cranberries
- 1/2 cup granulated sugar
- 1/2 cup chicken broth
- 1/4 cup orange juice
- 1 tablespoon cornstarch
- 2 tablespoons cold water
- 4 sprigs fresh thyme
Instructions
- Preheat oven to 375°F. Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- In the same skillet, combine cranberries, sugar, chicken broth, and orange juice. Simmer for 5-7 minutes until cranberries burst.
- Mix cornstarch with cold water in a small bowl to create a slurry, then add it to the cranberry mixture. Cook until thickened (1-2 minutes).
- Return chicken to the skillet, nestling it into the sauce, and add 2 sprigs of thyme on top.
- Bake for 15-20 minutes until chicken reaches an internal temperature of 165°F. Garnish with remaining thyme before serving.
