Instructions
- In a heatproof bowl, melt chopped white chocolate with heavy cream over a double boiler until smooth. Stir in vanilla and salt.
- Fold in finely chopped pistachios until evenly combined.
- Cover and refrigerate for 1-2 hours to firm up the mixture.
- Use a cookie scoop to form small balls from the chilled mixture.
- Roll each truffle in additional pistachios, cocoa powder, or powdered sugar based on preference.
- Chill on a parchment-lined baking sheet for another 30 minutes before serving.
