Ingredients
- 8 ounces egg noodles
- 1 pound ground beef
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 1 large carrot, julienned
- 1 bell pepper, sliced
- 2 cups bok choy or cabbage, chopped
- ¼ cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar
- 2 teaspoons cornstarch dissolved in 2 tablespoons water
- 2 green onions, chopped (for garnish)
Instructions
- Cook the egg noodles in boiling salted water until al dente. Drain and set aside.
- In a skillet or wok, heat vegetable oil and brown the ground beef with salt and pepper. Remove from skillet.
- Stir-fry onion, carrot, and bell pepper until softened. Add bok choy, garlic, and ginger; cook until tender.
- Combine soy sauce, oyster sauce, brown sugar, and cornstarch mixture in a bowl; pour over veggies in the skillet.
- Return beef and noodles to the skillet; toss everything together until heated through.
- Serve garnished with chopped green onions.
