- 4 cups fresh spinach
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the cheese tortellini in salted boiling water according to package instructions until al dente; drain.
- In a skillet, heat olive oil over medium heat and sauté minced garlic for about 1 minute until fragrant.
- Add sun-dried tomatoes and cook for 2 minutes; then incorporate fresh spinach until wilted.
- Pour in heavy cream, stir in Parmesan cheese, salt, pepper, and simmer for about 5 minutes until thickened.
- Combine cooked tortellini with the sauce, tossing gently to coat.
- Serve immediately garnished with fresh basil.
