Ingredients
- 2 cups fresh pineapple (peeled, cored, cubed)
- 4 habanero peppers (stems removed, seeded, minced)
- 1/2 cup white vinegar
- 1/4 cup water
- 2 cloves garlic ( minced)
- 2 tablespoons brown sugar
- 1 teaspoon salt
- 1/4 cup fresh cilantro (chopped)
Instructions
- In a medium saucepan, combine pineapple, habanero peppers, vinegar, water, garlic, brown sugar, and salt.
- Bring the mixture to a simmer over medium heat; reduce heat to low and cover. Cook for 15-20 minutes until the pineapple is tender.
- Remove from heat and let cool for 10 minutes.
- Blend the mixture until mostly smooth with some texture remaining.
- Stir in chopped cilantro.
- Pour into clean glass jars and allow to cool completely before sealing and refrigerating.
