- 4 ounces cream cheese
- 1/4 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F and prepare a loaf pan.
- Beat cream cheese with sugar, egg yolk, and vanilla until smooth; set aside.
- In another bowl, whisk flour, sugar, baking soda, pumpkin pie spice, and salt.
- In a separate bowl, mix eggs, pumpkin puree, oil, and vanilla until smooth.
- Combine wet and dry ingredients gently; do not overmix.
- Layer two-thirds of the batter in the pan followed by the cream cheese mixture and remaining batter. Swirl lightly.
- Bake for 55-65 minutes or until a toothpick comes out clean (not through the cream cheese).
- Cool before slicing.
