- 1 baguette, sliced into ½-inch thick pieces
- 1 can (4 ounces) sardines in olive oil, drained
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon
- 1 clove garlic, halved
- Salt and pepper to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Preheat oven to 400°F (200°C).
- Arrange baguette slices on a baking sheet and brush lightly with olive oil.
- Bake for 5-7 minutes until golden and crispy; set aside.
- In a bowl, mix sardines, olive oil, lemon juice, lemon zest, salt, and pepper until chunky.
- Rub garlic on toasted bread before topping generously with sardine mixture.
- Garnish with parsley and drizzle with additional olive oil. Serve with lemon wedges.
