Ingredients
- 4 medium zucchinis
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 egg (beaten)
- 2 tablespoons fresh basil, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 jar (24 ounces) marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Slice zucchinis lengthwise into thin strips and salt them; let sit for 10 minutes before patting dry.
- Mix ricotta, Parmesan, egg, herbs, garlic powder, salt, and pepper in a bowl until combined.
- Spread filling on each zucchini strip, roll tightly, and place seam-side down in a baking dish.
- Pour marinara sauce over the rolls and sprinkle with mozzarella cheese.
- Cover with foil and bake for 25 minutes; uncover and bake an additional 10-15 minutes until bubbly.
