Instructions
- Preheat oven to 375°F and line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, baking powder, spices, and salt.
- In a large bowl, cream softened butter, granulated sugar, and brown sugar until fluffy (2-3 minutes).
- Beat in the egg, then add pumpkin puree and vanilla; mix until smooth.
- Gradually add dry ingredients to wet mixture until just combined.
- Drop rounded tablespoons of dough onto prepared sheets, spacing 2 inches apart.
- Bake for 12-15 minutes until edges are golden; cool for 5 minutes on sheets before transferring to wire racks.
- For frosting, beat softened butter and cream cheese until smooth; gradually add powdered sugar until fluffy, mixing in vanilla and salt.
- Frost cooled cookies generously.
