  • ¼ cup packed light brown sugar (for streusel topping)

  • 2 tablespoons cold unsalted butter, cut into small pieces (for streusel topping)

Instructions

  1. Preheat your oven to 375°F and line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine milk, egg, melted butter, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the diced apples gently.
  5. For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl. Cut in cold butter until crumbly.
  6. Divide the batter into muffin liners, filling each two-thirds full. Top generously with streusel.
  7. Bake for 18-22 minutes until a skewer inserted comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
