- ¼ cup packed light brown sugar (for streusel topping)

- 2 tablespoons cold unsalted butter, cut into small pieces (for streusel topping)
Instructions
- Preheat your oven to 375°F and line a 12-cup muffin pan with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, combine milk, egg, melted butter, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the diced apples gently.
- For the streusel topping, mix flour, brown sugar, and cinnamon in a small bowl. Cut in cold butter until crumbly.
- Divide the batter into muffin liners, filling each two-thirds full. Top generously with streusel.
- Bake for 18-22 minutes until a skewer inserted comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack.
